Try This Recipe for Healthy Blueberry Muffins

Blueberry muffins are a popular breakfast item, but the store-bought versions can come loaded with unnecessary sugars, salt, and fats. If you fancy a bite of something sweet in the mornings, why not bake your own? This recipe is simple, quick, and best of all, healthy! The blueberries provide vital vitamins and antioxidants, the seeds offer fiber and protein, and the wholemeal flour provides slow-release energy to keep you full all morning.

Ingredients (to make 12):

  • 1/2 cup of wholemeal flour
  • ¼ cup of plain flour
  • ¼ cup of chia seeds
  • ½ cup of fresh blueberries
  • 2 eggs
  • 3 tablespoons of oil
  • 3 tablespoons of honey

Instructions:

  1. Heat the oven to 350F and line a muffin tray with cases.
  2. In a large mixing bowl, combine the two types of flour.
  3. Mix the chia seeds into the oil and add the honey.
  4. Break the eggs into the flour, whisk in well, and then add the oil and honey mix.
  5. Stir the mix well until it resembles a batter. Add the blueberries, stir through, and then pour some of the mix into each muffin tray.
  6. Bake for 20 minutes, or until risen and golden brown.
