This rich and tasty pasta dish is easy to make but produces incredible results. Perfect for date night or a catch-up with a friend with a glass of chardonnay. The creamy sauce perfectly complements the delicate salmon and the spinach and tomatoes bring some freshness and color.
Ingredients
(Serves 2)
- 2 salmon fillets
- 1 white onion
- 1 large clove garlic
- 1 cup spinach
- ½ cup cherry tomatoes
- ½ cup double cream
- 2 tablespoons lemon juice
- ¼ cup dill
- 5 oz pasta (shape of your choice)
Instructions
- Preheat the oven to 340℉
- Season each salmon fillet, drizzle with some olive oil, and then wrap in foil
- Place in the oven for 20-25 minutes
- Meanwhile, cook the pasta according to package instructions (and retain some pasta water when draining)
- Chop the garlic and onion
- Heat some oil in a pan and fry the onion for about 10 minutes until soft
- Add the garlic, cherry tomatoes, and dill, and then season to taste
- After 5 minutes add the spinach and stir through until wilted and then remove from the heat
- Once the salmon has cooked, leave to cool for 5-10 minutes and then chop into smaller pieces
- Add the salmon and the pasta to the pan, and then pour in the cream, lemon juice, and a few tablespoons of the pasta water
- Return to the heat and simmer for about 10 minutes, stirring frequently
- Serve immediately with some grated parmesan if desired
