These Vegan Hand Rolls are Easy to Make and So Impressive Looking!

Hand rolls are a great alternative to making sushi at home because they’re much easier and require a lot less technique. Yet, they come out so beautifully, they’re the perfect accent to any dinner party or addition to any lunch!

Ingredients

  • 3 cups of cooked sushi rice
  • 10 sheets of nori
  • 1 cucumber
  • 2 carrots
  • 1 avocado
  • 2 scallions

Recipe

  1. Take the nori sheets and cut them in half so they are squares.
  2. Cut the cucumber in half, deseed it, and cut it into 2-3 inch strips.
  3. Peel the carrot and cut it into 2-3 inch strips as well.
  4. Thinly slice the avocado and chop up the scallions finely.
  5. Lay down rice onto the nori sheet only on one small end of it, followed by the cucumber, carrot, avocado, at a diagonal on the rice. Top with the scallions.
  6. Take a small bowl and fill it with a bit of water and leave it nearby.
  7. Fold the corner of the nori sheet over the rice and fillings, and then form it into a cone shape.
  8. Finally, use the water to rub on the edge of the sheet and secure the cone. This should hold it in place.
  9. Repeat for the rest of the sheets, serve with soy sauce, and enjoy!
